Fischer, Emil (Hermann)
(9 oct. 1852, Euskirchen, Prusia–15 jul. 1919, Berlín, Alemania).

Químico orgánico alemán. Obtuvo su Ph.D. en 1874. Determinó las estructuras del ácido úrico, de la cafeína y de compuestos relacionados, demostrando que todos son derivados de un solo compuesto que nombró purina. Esto lo condujo a estudiar la estructura de las proteínas y las formas en las cuales los aminoácidos se combinan para formar las proteínas. Estableció las estructuras moleculares de la glucosa, de la fructosa y de muchos otros azúcares, verificando sus resultados mediante la síntetización de cada uno de ellos, y separó los 15 estereoisómeros de la glucosa (ver isómero; configuración; actividad óptica). Sus investigaciones en los azúcares fueron de una importancia sin paralelo para la química orgánica y ganó en 1902 el segundo Premio Nobel de Química. Con sus investigaciones acerca de la fermentación, sentó las bases de la química de enzimas.
